Description

Ingredients

  • 1 lb lean ground beef
  • ½ large yellow onion, diced
  • 2 tsp garlic, minced
  • 1 oz onion soup mix (dry)
  • 1 cup frozen peas and carrots (or preferred vegetables)
  • 2 cups low-sodium beef broth
  • 10 oz cheese-filled tortellini (about 3 cups refrigerated)
  • 1 cup shredded Gruyere cheese
  • ½ cup sour cream
  • ½ tsp black pepper

Instructions

  1. In a large skillet over medium-high heat, brown ground beef and diced onion until beef is no longer pink and onion is tender. Drain fat if needed.
  2. Add garlic and onion soup mix; stir and cook for 30 seconds.
  3. Add vegetables and beef broth; bring to a boil.
  4. Stir in tortellini, cover, reduce heat, and simmer for 7 minutes, stirring occasionally.
  5. Lower heat and mix in sour cream and Gruyere until melted and creamy.
  6. Season with black pepper, stir, and serve hot.
