Ingredients

  • 2 large eggs
  • Pinch of fine sea salt
  • 1/2 tablespoon unsalted butter
  • 1/4 cup shredded mozzarella cheese (or cheese of choice)

Instructions

  1. In a small mixing bowl, beat eggs with a pinch of salt until light and foamy.
  2. Heat a small nonstick skillet over medium heat and add butter. Swirl until melted and bubbling.
  3. Pour the beaten eggs into the skillet and immediately reduce heat to low.
  4. Using a spatula, gently pull cooked egg from the edges toward the center, letting uncooked egg flow behind.
  5. Continue this method around the pan until the eggs are almost fully set.
  6. Once the omelette slides easily in the pan and a spatula fits underneath, flip the omelette. Turn off the heat.
  7. Sprinkle mozzarella cheese evenly over the eggs. Add any additional toppings if desired.
  8. Fold the omelette in half and carefully slide it onto a plate. Garnish and serve hot.
