Ingredients
- 2 large eggs
- Pinch of fine sea salt
- 1/2 tablespoon unsalted butter
- 1/4 cup shredded mozzarella cheese (or cheese of choice)
Instructions
- In a small mixing bowl, beat eggs with a pinch of salt until light and foamy.
- Heat a small nonstick skillet over medium heat and add butter. Swirl until melted and bubbling.
- Pour the beaten eggs into the skillet and immediately reduce heat to low.
- Using a spatula, gently pull cooked egg from the edges toward the center, letting uncooked egg flow behind.
- Continue this method around the pan until the eggs are almost fully set.
- Once the omelette slides easily in the pan and a spatula fits underneath, flip the omelette. Turn off the heat.
- Sprinkle mozzarella cheese evenly over the eggs. Add any additional toppings if desired.
- Fold the omelette in half and carefully slide it onto a plate. Garnish and serve hot.
