Ingredients
Chicken and Marinade
- 1 lb Boneless, Skinless Chicken Thighs (or substitute chicken breasts, butterflied and pounded to 1/2 inch thickness)
- 1/2 cup Vinegar-Based Salad Dressing of your choice
- Kosher Salt & Freshly Cracked Black Pepper, to taste
Wrap and Toppings
- 4 Pitas (or substitute naan or flatbread of your choice)
- 1/2 English Cucumber, chopped
- 1 pint Cherry Tomatoes, halved
- 1 cup Arugula
- 1/2 cup Red Onion Pickles (or plain sliced red onion and/or pickled banana pepper slices)
- 1 Ripe Avocado, cubed
- 1/2 cup Tzatziki (homemade or store-bought)
- 4 oz Crumbled Feta
Instructions
- Marinate the Chicken: Season the chicken thighs with kosher salt and freshly cracked black pepper. Place them in a shallow dish and pour the vinegar-based salad dressing over them. Let them marinate for 15 minutes to 1 hour to absorb the flavors.
- Grill the Chicken: Preheat your grill to medium-high heat. Grill the marinated chicken thighs until they are fully cooked and reach an internal temperature of 165°F (74°C), ensuring they are juicy and flavorful.
- Rest and Prepare Pitas: After grilling, transfer the chicken to a plate and tent with foil. Allow the chicken to rest for 10 minutes, helping the juices redistribute. Meanwhile, warm the pita breads on the grill or in a warm oven to make them pliable and soft.
- Chop Chicken and Assemble Wraps: Chop the rested chicken into bite-sized pieces. Spread approximately 2 tablespoons of tzatziki on each warmed pita. Layer the chicken, chopped cucumber, cherry tomatoes, arugula, red onion pickles, cubed avocado, and crumbled feta evenly among the wraps. Adjust quantities based on your preference.
- Serve and Enjoy: Wrap the pita around the fillings snugly and serve immediately for a delicious and satisfying meal.
Notes
- If you prefer chicken breasts over thighs, butterfly and pound them to even thickness for optimal grilling.
- Use your favorite vinegar-based salad dressing for marinade variations.
- Warm pitas before assembling to prevent cracking when wrapping.
- Tzatziki can be homemade or store-bought depending on convenience.
- Feel free to add additional fresh herbs like mint or dill to enhance fresh flavors.
