Ingredients
- For the cake:
- 2 cups sugar
- 2 cups flour, plus 1 tablespoon (divided)
- 1 teaspoon baking powder
- 2 teaspoons baking soda, divided
- 1/2 pound unsalted butter
- 1/4 cup sweetened cocoa powder (Ghirardelli preferred)
- 1 cup water
- 2 large eggs
- 1/2 teaspoon kosher salt
- 1/2 cup milk
- 1/2 tablespoon vinegar
- 1 teaspoon vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
- For the icing:
- 1/4 cup sweetened cocoa powder (Ghirardelli preferred)
- 1/4 pound unsalted butter
- 6 tablespoons milk
- 1 pound powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 375°F (190°C) and grease and flour a 9×12 cake pan.
- In a small cup, combine 1/2 cup milk and 1/2 tablespoon vinegar. Set aside to create buttermilk.
- In a medium bowl, whisk together 2 cups flour, sugar, 1 teaspoon baking soda, salt, and baking powder. Set aside.
- In a small saucepan, combine the butter, cocoa powder, and water. Bring to a boil, then pour into the dry flour mixture and beat well.
- Add the eggs to the flour-butter mixture, followed by the milk-vinegar mixture and vanilla extract. Mix until fully combined.
- Fold in the chocolate chips and pour the batter into the prepared cake pan.
- Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the icing: In a saucepan, bring cocoa, butter, and milk to a boil. Remove from heat, then add powdered sugar, salt, and vanilla. Beat until smooth.
- Once the cake is done, immediately spread the hot icing over the freshly baked cake. Let it set slightly before slicing and serving. Enjoy!
