These Easy Blueberry Cheesecake Crumble Bars feature a buttery oat crust topped with creamy cheesecake filling swirled with homemade blueberry jam and finished with a crunchy crumble topping. Ingredients
Blueberry Swirl
- 1 cup fresh or frozen blueberries (140g)
- 1 tablespoon granulated sugar (15g)
- 1 teaspoon lemon juice (5ml)
- 1 teaspoon cornstarch (4g)
- 2 to 2½ tablespoons cold water (30–45ml, more if needed)
Crust and Crumble Topping
- 1 cup all-purpose flour (125g)
- 1 teaspoon baking powder
- ¼ teaspoon ground cinnamon
- 1 cup old-fashioned oats (90g)
- ¼ teaspoon salt
- ½ cup unsalted butter (at room temperature, 113g)
- ½ cup light brown sugar, packed (100g)
- ½ teaspoon vanilla extract
Cheesecake Filling
- 16 ounces full-fat cream cheese (454g)
- ½ cup Greek yogurt or sour cream (125g)
- ½ cup granulated sugar (100g)
- 2 medium eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (15ml)
- ½ cup fresh blueberries (70g, for scattering on top)
Instructions
- Make the Blueberry Swirl: Add blueberries, sugar, cornstarch, lemon juice, and water to a small saucepan. Cook on medium-low heat, stirring constantly for 5–6 minutes until berries soften and release juices, mashing some to break down. Add a bit more water if mixture seems dry. Continue stirring until thickened to jam-like consistency. Transfer to a bowl and refrigerate to thicken further.
- Prepare Oven and Pan: Preheat oven to 350°F (180°C). Line a baking pan with parchment paper, leaving overhang for easy removal later.
- Make the Crust and Crumble Mixture: Whisk flour, baking powder, cinnamon, oats, and salt in a medium bowl. In a large bowl, beat butter and brown sugar with an electric mixer on medium-high speed until smooth, about 1 minute. Mix in vanilla extract. Add dry ingredients and beat on low-medium until combined and crumbly.
- Form and Bake Crust: Press just over half of the crumb mixture into the bottom of the pan gently without packing tightly. Bake 7–8 minutes until lightly set, then remove from oven but keep oven on.
- Reserve Crumble Topping: Use fingers to squeeze remaining crumble mixture into clumps to be sprinkled on top later. Set aside.
- Prepare Cheesecake Filling: In a clean bowl, beat cream cheese until smooth and creamy (1–2 minutes). Add sugar and mix just until combined. Add Greek yogurt (or sour cream), eggs, vanilla extract, and lemon juice, mixing gently until just combined.
- Assemble Bars: Pour cheesecake filling over baked crust and smooth evenly. Remove blueberry swirl from fridge, stir gently, and spoon dollops over cheesecake filling spaced apart. Use a toothpick to swirl the blueberry jam carefully into the filling without disturbing the crust.
- Add Fresh Blueberries and Crumble: Scatter fresh blueberries evenly across the top, then sprinkle the reserved crumble clumps over everything.
- Bake Bars: Bake for 30–35 minutes until edges are lightly browned and set but center still slightly jiggly when pan is shaken gently.
- Cool Gradually: Turn off oven, leave door slightly open using a wooden spoon to prop it; cool bars inside oven for 30 minutes.
- Final Cooling: Remove from oven and let come to room temperature. Refrigerate at least 3 hours or overnight to fully set the cheesecake bars.
- Serve: Lift bars out using parchment overhang and cut into squares or bars. Serve chilled and enjoy!
