These Date Bars are a delightful treat featuring a chewy date filling nestled between a crumbly oat and pecan crust. Perfect as a snack or dessert, they combine wholesome ingredients like Medjool dates, rolled oats, and pecans with a touch of warm cinnamon for a comforting, naturally sweet flavor. Baked to a golden brown, these bars offer a perfect balance of texture and taste.
Ingredients
Filling
- 1½ cups chopped pitted Medjool dates
- 1 tablespoon lemon juice
- ½ cup finely chopped pecans
Crust and Topping
- 1½ cups all-purpose flour
- 1 cup rolled oats
- ⅔ cup packed dark brown sugar
- ½ teaspoon ground cinnamon
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup (1 stick) unsalted butter, melted
Instructions
- Preheat and prepare baking dish: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, allowing about 2 inches of extra parchment on both sides for easy removal of the bars later.
- Cook the dates: In a small saucepan, bring 1 1/4 cups of water to a boil over high heat. Add the chopped dates and boil, stirring occasionally, until the water evaporates and the dates have melted and thickened, about 5 minutes. Remove from heat, stir in the lemon juice and chopped pecans, then set aside to cool for 10 minutes.
- Prepare the flour mixture: In a large bowl, whisk together the flour, rolled oats, dark brown sugar, ground cinnamon, baking soda, and salt until well combined. Pour the melted butter over the mixture. Using your fingertips, rub the butter into the dry ingredients until you achieve a pebbly texture with moist, pea-sized clumps.
- Assemble the bars: Press half of the flour mixture evenly and firmly into the bottom of the prepared baking dish to form a crust. Spread the cooled date mixture evenly over this layer. Sprinkle the remaining flour mixture evenly over the date layer and gently press to help the crumbs adhere.
- Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the top and edges turn golden brown.
- Cool and serve: Remove the baking dish from the oven and transfer it to a wire rack to cool completely. Once cooled, use the parchment overhang to lift the entire block out of the dish. Cut into 16 equal bars and serve.
Notes
- Using Medjool dates offers a naturally sweet and moist filling; if using other date varieties, adjust cooking time accordingly.
- Line the baking dish with parchment paper for easy removal and clean-up.
- Ensure the date mixture is cooled before assembling to prevent melting the flour mixture excessively.
- Store bars in an airtight container at room temperature for up to 5 days or freeze for longer storage.
- For a nut-free version, omit pecans or substitute with seeds like pumpkin or sunflower seeds.
