Ingredients
- Protein & Base:
- 1 pound lean ground beef
- 1 packet taco seasoning mix
- 4 large flour tortilla wraps
- Vegetables & Aromatics:
- ½ cup yellow onion, finely diced
- ½ cup green bell pepper, chopped
- 1 can diced tomatoes with green chilies
- Small handful of crisp iceberg lettuce, shredded
- Cheese & Toppings:
- 1 cup warm nacho cheese sauce
- ½ cup sour cream
- ½ cup nacho cheese Doritos, crushed into bits
Instructions
- Cook the Beef: Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up as it browns. Drain excess fat once fully cooked.
- Cook the Vegetables: Add the diced onion and chopped green bell pepper to the skillet. Cook for about 4 minutes until softened.
- Season the Beef: Sprinkle the taco seasoning over the beef and vegetables, stirring to coat evenly. Let it cook for another minute.
- Prepare the Cheese Mixture: In a small bowl, mix the nacho cheese sauce with the diced tomatoes and green chilies until well combined.
- Assemble the Egg Rolls: Lay the tortillas flat. Spread a generous stripe of the cheese mixture down the center, leaving space at the edges. Spoon the seasoned beef mixture over the cheese, then add dollops of sour cream, shredded lettuce, and a sprinkle of crushed Doritos.
- Roll the Tortillas: Fold the sides of each tortilla in, then roll them tightly from bottom to top, securing the filling inside.
- Fry the Rolls: Heat a skillet over medium heat. Place the rolls seam-side down and cook, turning occasionally, until all sides are golden brown and crispy.
- Serve: Let them cool for a minute before slicing in half, if desired. Serve while the cheese is melty inside and the outside is crunchy.
Notes
- You can add jalapeños or hot sauce for extra spice.
- For a lighter version, you can bake the egg rolls instead of frying them.
