Green Beans

  • 1 lbs. green beans

Seasonings & Toppings

  • 2 Tbsp avocado oil (or olive oil)
  • 6 garlic cloves, minced or finely chopped
  • ¼ cup grated Parmesan cheese
  • ¼ tsp salt (or to taste)
  • ½ tsp black pepper
  • Lemon, to squeeze over the top (optional)


Instructions

  1. Preheat Oven and Prepare Baking Pan: Turn your oven on to 400 degrees Fahrenheit and line a large baking pan with parchment paper. If you have a larger quantity of green beans or a smaller oven, consider using two pans to avoid overcrowding.
  2. Trim Green Beans: Snap or cut off both ends of the green beans and place them in a large bowl, ensuring they are all trimmed uniformly for even cooking.
  3. Toss Green Beans with Ingredients: Add avocado oil, minced garlic, grated Parmesan, salt, and black pepper to the bowl with the green beans. Toss thoroughly until every green bean is evenly coated with oil, garlic, and seasoning.
  4. Arrange for Roasting: Pour the coated green beans onto the prepared baking pan(s) and spread them out in a single layer. It’s okay if some beans overlap slightly, but avoid overcrowding for best results.
  5. Roast the Green Beans: Place the pan(s) in the preheated oven and roast for 15-20 minutes, checking around 10-12 minutes to gauge doneness. Roast until the beans are tender and crispy to your liking.
  6. Finish and Serve: Once roasted, optionally squeeze fresh lemon juice over the green beans to add a bright, fresh note. Serve immediately while hot and crispy.
