Description

Ingredients

  • Caesar Dressing:
    • ½ cup full-fat mayonnaise
    • 3 tbsp Greek yogurt
    • 1 tsp Dijon mustard
    • 1 tsp soy sauce
    • 2 tbsp lemon juice
    • ¼ cup freshly grated Parmesan cheese
    • 12 garlic cloves, minced
    • ¼ tsp black pepper
    • Pinch of sea salt
  • Chicken:
    • 5 chicken cutlets
    • Sea salt, to taste
    • Ground black pepper, to taste
    • Oil for frying
  • Flour Mixture:
    • ⅓ cup all-purpose flour
    • ½ tsp salt
    • ¾ tsp smoked paprika
  • Egg Mixture:
    • 2 eggs
    • ¼ tsp salt
  • Breadcrumb Mixture:
    • ¾ cup panko breadcrumbs
    • ¼ cup regular breadcrumbs
    • 1 tsp dried parsley
    • ½ tsp ground black pepper
    • ½ tsp sea salt
    • ½ tsp dried oregano
    • 1 tsp garlic powder
    • ¼ cup freshly grated Parmesan cheese
  • Assembly:
    • 2 romaine hearts, chopped
    • 12 French baguettes
    • Extra Parmesan cheese, for topping

Instructions

  1. Make the Dressing:
    Combine all Caesar dressing ingredients in a bowl until smooth. Mix 4–5 tbsp of the dressing with chopped romaine lettuce in a separate bowl. Refrigerate both until ready to assemble.
  2. Prepare the Chicken:
    Flatten chicken cutlets to even thickness using a meat mallet. Season both sides with salt and pepper.
  3. Bread the Chicken:
    Set up three shallow bowls: one with the flour mixture, one with whisked eggs and salt, and one with the breadcrumb mixture. Dredge each chicken cutlet in flour, dip in the egg mixture, then press into the breadcrumb mixture to coat.
  4. Fry the Chicken:
    Heat oil in a skillet over medium heat. Fry cutlets 4–5 minutes per side, or until golden brown and cooked through. Drain on a wire rack.
  5. Assemble the Sandwiches:
    Slice the baguettes into 5-inch portions and split them open. Spread Caesar dressing on one side of the bread. Place a crispy chicken cutlet, top with Caesar salad mix, and sprinkle with extra Parmesan cheese. Serve immediately with your favorite sides.
