Ingredients
Vegetables
- 1 head cauliflower, chopped into small florets (about 3 cups)
- Chopped green onions (for garnish)
Dry Ingredients
- ¼ cup all-purpose flour
- ¼ cup Italian breadcrumbs
- ½ cup grated parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Wet Ingredients
- 1 large egg
- Olive oil (for frying)
Instructions
- Prep: Bring a large pot of water to a boil to prepare for steaming the cauliflower florets.
- Steam Cauliflower: Steam 1 head of cauliflower, chopped into small florets, for 5-10 minutes until tender enough to mash but not mushy. Drain well and let cool slightly.
- Mash: In a large bowl, mash the steamed cauliflower using a fork or potato masher until slightly chunky.
- Combine Ingredients: Add ¼ cup all-purpose flour, ¼ cup Italian breadcrumbs, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ cup grated parmesan cheese, 1 large egg, ½ teaspoon salt, and ½ teaspoon black pepper to the mashed cauliflower. Stir everything until well combined into a batter-like mixture.
- Shape Patties: Form the cauliflower mixture into small, uniform patties for even cooking.
- Fry: Heat olive oil in a skillet over medium-low heat. Cook the patties in batches, frying each side for 6-8 minutes until they turn golden brown and crispy. Add more olive oil between batches if needed to prevent sticking.
- Serve: Garnish the fritters with chopped green onions and serve warm with your favorite dipping sauce.
Notes
- Ensure cauliflower is well drained after steaming to avoid runny batter.
- Control heat while frying to cook through without burning the outside.
- These fritters can be kept warm in a low oven while frying remaining batches.
- For a gluten-free version, substitute all-purpose flour and breadcrumbs with gluten-free alternatives.
- Leftover fritters can be refrigerated and reheated in a skillet or oven for best texture.
