Description

These crispy cauliflower fritters are a delicious and healthy snack or appetizer, featuring tender steamed cauliflower mixed with parmesan, herbs, and lightly fried to golden perfection. Perfect for a low-carb treat or a vegetarian-friendly bite.

Ingredients

Vegetables

  • 1 head cauliflower, chopped into small florets (about 3 cups)
  • Chopped green onions (for garnish)

Dry Ingredients

  • ¼ cup all-purpose flour
  • ¼ cup Italian breadcrumbs
  • ½ cup grated parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Wet Ingredients

  • 1 large egg
  • Olive oil (for frying)

Instructions

  1. Prep: Bring a large pot of water to a boil to prepare for steaming the cauliflower florets.
  2. Steam Cauliflower: Steam 1 head of cauliflower, chopped into small florets, for 5-10 minutes until tender enough to mash but not mushy. Drain well and let cool slightly.
  3. Mash: In a large bowl, mash the steamed cauliflower using a fork or potato masher until slightly chunky.
  4. Combine Ingredients: Add ¼ cup all-purpose flour, ¼ cup Italian breadcrumbs, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ cup grated parmesan cheese, 1 large egg, ½ teaspoon salt, and ½ teaspoon black pepper to the mashed cauliflower. Stir everything until well combined into a batter-like mixture.
  5. Shape Patties: Form the cauliflower mixture into small, uniform patties for even cooking.
  6. Fry: Heat olive oil in a skillet over medium-low heat. Cook the patties in batches, frying each side for 6-8 minutes until they turn golden brown and crispy. Add more olive oil between batches if needed to prevent sticking.
  7. Serve: Garnish the fritters with chopped green onions and serve warm with your favorite dipping sauce.

Notes

  • Ensure cauliflower is well drained after steaming to avoid runny batter.
  • Control heat while frying to cook through without burning the outside.
  • These fritters can be kept warm in a low oven while frying remaining batches.
  • For a gluten-free version, substitute all-purpose flour and breadcrumbs with gluten-free alternatives.
  • Leftover fritters can be refrigerated and reheated in a skillet or oven for best texture.
