Ingredients
- 2 large sweet onions (Vidalia or yellow)
- 1 ½ cups buttermilk (or dairy-free substitute with a splash of vinegar or lemon juice)
- 1 tsp salt
- ¾ cup all-purpose flour
- 3 large eggs
- 2 tablespoons milk or water
- 2 cups panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp ground black pepper
- ½ tsp cayenne pepper (optional)
- Salt to taste
- Non-stick spray or olive oil spray
Instructions
- Peel and slice the onions into ½-inch thick rings. Gently separate the rings, keeping aside any smaller inner rings for another use. Soak the onion rings in buttermilk with 1 tsp salt for at least 30 minutes, or refrigerate overnight for deeper flavor.
- Set up a three-bowl breading station: Bowl 1: Combine flour with a pinch of salt and pepper. Bowl 2: Whisk eggs with a splash of milk or water. Bowl 3: Mix panko breadcrumbs with garlic powder, paprika, black pepper, salt, and optional cayenne.
- Preheat to 425°F (220°C). Line two baking sheets with parchment paper or lightly oiled foil. For extra crispiness, use a wire rack.
- One by one, dip each onion ring in the flour, then the egg wash, and finally coat in the panko mixture. Arrange them on the baking sheet and lightly spray with olive oil or non-stick spray.
- Bake for 10 minutes, flip each ring, and bake for another 10–15 minutes until golden brown and crispy.
- Let the rings cool slightly, then serve with your favorite dips like ranch, garlic aioli, or spicy mayo.
