Salmon
- 2 tablespoons olive oil
- 4 salmon fillets, about 4 ounces each

Tuscan Cream Sauce
- 2 tablespoons butter
- 6 cloves garlic, smashed and minced
- 18 ounces cherry tomatoes (half chopped, half whole)

- 1/4 teaspoon cayenne pepper

Instructions
- Prepare the Salmon: Heat a 12-inch high-sided skillet over medium-high heat for a couple of minutes to get it very hot. Meanwhile, pat the salmon fillets dry with paper towels. Sprinkle the top of each fillet with 1 teaspoon kosher salt and 1/2 teaspoon black pepper.
- Sear the Salmon: Add 2 tablespoons olive oil to the hot pan and swirl to coat; the oil should shimmer immediately. Place each salmon fillet into the pan, skin side down if skin is on, ensuring they are spaced apart. Sprinkle the other side with salt and pepper. Sear the salmon for 1-3 minutes depending on thickness until you have a nice brown crust. Flip the fillets and cook for another 30 seconds to 1 minute before turning off the heat to avoid overcooking.
- Keep Salmon Warm: Remove the seared salmon from the pan and set aside on a plate to keep warm.
