Instructions
- Sauté Onion: Heat the olive oil in a skillet over medium-high heat. Add the finely chopped onion and sauté for about 5 minutes until it is softened and lightly golden, developing a sweet and aromatic base for the sauce.
- Add Aromatics and Broth: Stir in the broth, Dijon mustard, minced garlic, and Italian seasoning. Mix well to combine and let the mixture simmer gently for about 1 minute to meld the flavors together.
- Add Tomatoes, Cream, and Gnocchi: Pour in the diced tomatoes with their juices, followed by the heavy cream and uncooked potato gnocchi. Bring the mixture to a gentle bubble over medium heat, then reduce heat to medium, cover the skillet, and cook for 5 minutes to allow the gnocchi to cook through and the sauce to thicken.
- Finish with Basil and Seasoning: Remove the lid, stir the mixture well, then add the torn or chopped fresh basil. Season with salt and pepper to taste. Continue cooking uncovered for another 2 to 3 minutes until the gnocchi is tender and the sauce has thickened to a creamy consistency.
- Add Parmesan and Serve: Stir in freshly grated Parmesan cheese if using, or sprinkle it on top just before serving. Serve the gnocchi immediately while warm and creamy for the best taste and texture.
