Description
Creamy Ranch Chicken is a flavorful and comforting dish featuring tender boneless chicken breasts seared to a golden brown and smothered in a rich, creamy ranch sauce made with cream of chicken soup, sour cream, and a tangy ranch seasoning blend. This quick stovetop recipe is perfect for a satisfying weeknight meal and pairs wonderfully with baked potatoes or your favorite sides.
Ingredients
Chicken
- 2 large boneless/skinless chicken breasts
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons butter, melted
- 1-2 tablespoons olive oil
Sauce
- 10.5 oz. cream of chicken soup
- 1 ½ cups milk
- 1 cup sour cream, at room temperature
- ½ teaspoon onion powder
- 1 oz. packet ranch seasoning mix
Instructions
- Prepare the Chicken: Slice each chicken breast into 2-3 thinner pieces, aiming for about ½ inch thickness. If necessary, pound the slices gently with a meat tenderizer to achieve even thickness. This helps the chicken cook evenly and stay juicy.
- Season the Chicken: Pat the chicken slices completely dry with paper towels. Sprinkle both sides evenly with Italian seasoning, and salt and pepper to taste. Brush one side of each piece with melted butter, ensuring the butter is not too hot to avoid cooking the chicken prematurely.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken slices in batches, taking care not to overcrowd the pan. Sear the chicken for 4-5 minutes on each side until a beautiful golden-brown crust forms. Remove the seared chicken slices from the skillet and set aside.
- Make the Sauce: In the same skillet, reduce the heat to medium and add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir thoroughly to combine all ingredients. Let the sauce gently bubble and reduce for about 5 minutes, stirring occasionally to prevent sticking.
- Simmer Chicken in Sauce: Return the seared chicken slices to the skillet, nestling them into the creamy ranch sauce. Spoon the sauce over the chicken to cover it evenly. Partially cover the skillet with a lid and let the chicken cook through while absorbing the flavor of the sauce, approximately 10 minutes.
- Serve: Once the chicken is cooked through and the sauce has thickened slightly, serve hot. This dish goes wonderfully over baked potatoes or with your favorite side vegetables, spooning extra sauce on top for added richness.
Notes
- For extra flavor, consider adding minced garlic to the sauce step.
- Use full-fat sour cream for a creamier texture.
- Make sure the chicken is pounded to uniform thickness to ensure even cooking.
- If you don’t have cream of chicken soup, a homemade white sauce can be substituted.
- Adjust seasoning to taste, especially salt, as ranch seasoning mix can contain salt.
