Description

A quick and creamy garlic pasta recipe perfect for a comforting weeknight dinner. This luscious sauce made with butter, garlic, chicken broth, cream, and parmesan cheese coats tender linguine for a rich, flavorful dish ready in just 15 minutes.

Ingredients

Pasta

  • 8 ounces uncooked linguine pasta

Sauce

  • 1 tablespoon butter
  • 1 teaspoon flour
  • 2-3 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 cup heavy whipping cream
  • 1/3 cup freshly grated parmesan cheese
  • Salt and pepper, to taste
  • Chopped fresh parsley, optional, to taste

Instructions

  1. Cook Pasta: Boil a large pot of salted water and cook the linguine pasta al dente according to package directions, typically around 8-10 minutes. Drain when ready, reserving some pasta water if needed later.
  2. Make Roux: In a skillet over medium-high heat, melt the butter. Stir in the flour and cook for about 2 minutes, stirring frequently to form a roux and cook out the raw flour taste.
  3. Add Garlic and Broth: Stir in the minced garlic and chicken broth, allowing the mixture to simmer gently for about one minute to let the flavors blend.
  4. Add Cream and Thicken Sauce: Whisk in the heavy cream and let the sauce cook for several minutes, stirring occasionally, until it thickens to your desired consistency.
  5. Incorporate Cheese and Season: Stir in the freshly grated parmesan cheese until melted and smooth. Season the sauce with salt and pepper to taste.
  6. Combine Pasta and Sauce: Drain the pasta and toss it in the skillet with the creamy garlic sauce, adding reserved pasta water if you want to thin the sauce slightly. Mix until well coated.
  7. Serve: Plate the pasta immediately and garnish with chopped fresh parsley and extra parmesan cheese if desired.

Notes

  • Use freshly grated parmesan for best flavor and texture.
  • Reserve some pasta water to adjust sauce consistency if needed.
  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Do not overcook the pasta; al dente gives the best texture and helps the sauce cling better.
  • Chopped parsley adds a fresh color and flavor contrast, but is optional.
