Ingredients

  • 3 cups frozen corn, thawed
  • 1 ½ cups shredded Cheddar cheese
  • 1 cup sour cream or Greek yogurt
  • ½ cup mayonnaise
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 (4-ounce) can diced green chiles, drained
  • ¼ cup finely diced red onion
  • ¼ cup finely chopped red bell pepper
  • 1 jalapeño pepper, finely chopped

Instructions

  1. In a medium mixing bowl, combine the thawed corn, Cheddar cheese, sour cream (or Greek yogurt), mayonnaise, green chiles, red onion, red bell pepper, and jalapeño.
  2. Stir until all ingredients are well combined.
  3. Cover and refrigerate for at least 2 hours to allow the flavors to meld.
  4. Serve with tortilla chips or fresh vegetables for dipping.

Notes
