Ingredients
- 1 very ripe avocado
- 1/2 cup packed fresh parsley or cilantro leaves (stems removed)
- Sea salt and freshly ground black pepper, to taste (about 1/4–1/2 teaspoon each)
- 1/2 teaspoon ground cumin
- Juice of one large lime
- 1/3 cup extra virgin olive oil or avocado oil
- 2 fresh garlic cloves, peeled
- 1/3–1/2 cup cold water (start with less and add more to reach desired consistency)
Instructions
- Add all ingredients to a high-speed blender or food processor.
- Blend until completely smooth, scraping down the sides as needed.
- Taste and adjust salt, pepper, or lime juice to your preference.
- If the dressing is too thick, blend in more cold water until it reaches your desired consistency.
- Store in an airtight jar in the refrigerator for up to 3 days. If it thickens while stored, simply whisk in a bit more water before serving.
