Description

A lusciously smooth and zesty dressing made with ripe avocado, fresh herbs, lime juice, and a hint of cumin—perfect for drizzling over salads, roasted veggies, or grain bowls. This vibrant green dressing is naturally creamy, dairy-free, and ready in minutes.


Ingredients

  • 1 very ripe avocado
  • 1/2 cup packed fresh parsley or cilantro leaves (stems removed)
  • Sea salt and freshly ground black pepper, to taste (about 1/4–1/2 teaspoon each)
  • 1/2 teaspoon ground cumin
  • Juice of one large lime
  • 1/3 cup extra virgin olive oil or avocado oil
  • 2 fresh garlic cloves, peeled
  • 1/31/2 cup cold water (start with less and add more to reach desired consistency)

Instructions

  1. Add all ingredients to a high-speed blender or food processor.
  2. Blend until completely smooth, scraping down the sides as needed.
  3. Taste and adjust salt, pepper, or lime juice to your preference.
  4. If the dressing is too thick, blend in more cold water until it reaches your desired consistency.
  5. Store in an airtight jar in the refrigerator for up to 3 days. If it thickens while stored, simply whisk in a bit more water before serving.
