Description

This Cottage Cheese Bread recipe offers a healthy, protein-rich alternative to traditional bread, using simple ingredients like cottage cheese, oats, and eggs. It is easy to prepare, requires no kneading, and is perfect for breakfast or snacks. The bread is moist, lightly dense, and works well toasted or fresh.

Ingredients

Primary Ingredients

  • 1 cup (220 g) full-fat cottage cheese
  • 1 large egg
  • 2 egg whites (or 1 whole egg more)
  • 1 ½ cup (150 g) rolled oats (or oat flour)
  • 2 tsp baking powder
  • ⅓ tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) preparing it to bake the bread.
  2. Prepare Pan: Line a 6-inch (15 cm) loaf pan with parchment paper or grease it lightly with oil to prevent sticking.
  3. Strain Cottage Cheese: Remove excess liquid from the cottage cheese by straining it carefully to ensure the bread batter is not too wet.
  4. Blend Ingredients: Into a blender, add the strained cottage cheese, large egg, egg whites, rolled oats or oat flour, baking powder, and salt. Blend until the mixture is smooth but avoid overmixing to maintain texture.
  5. Transfer Batter: Pour the blended batter evenly into the prepared loaf pan, smoothing the top for even baking.
  6. Bake Bread: Place the pan in the preheated oven and bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Allow the bread to cool slightly before removing from the pan. Slice and enjoy fresh or toasted.

Notes

  • Full-fat cottage cheese provides better moisture and flavor than low-fat versions.
  • Using oat flour instead of rolled oats will give a finer texture to the bread.
  • Be careful not to overblend the batter to maintain a nice crumb.
  • This bread is gluten-free if using pure oats or oat flour certified gluten-free.
  • Store bread in an airtight container for up to 3 days or freeze for longer storage.
