Description

These Copycat Olive Garden Breadsticks are soft, buttery, and flavorful, perfectly replicating the iconic breadsticks served at the popular restaurant. They feature a tender dough infused with garlic and salt, baked to a golden brown, and finished with a generous brushing of melted butter and a sprinkle of garlic powder and kosher salt. Ideal as an appetizer or a side, these breadsticks bring restaurant-quality comfort to your home kitchen.

Ingredients

Dough

  • 1 cup plus 2 tablespoons (250 grams) warm water (about 100-110°F)
  • 1 1/2 teaspoons instant yeast
  • 2 tablespoons (25 grams) granulated sugar
  • 3 tablespoons (42 grams) unsalted butter, melted
  • 1 3/4 teaspoons fine sea salt
  • 3 cups (381 grams) bread flour, plus more as needed

Topping

  • 2 tablespoons (28 grams) unsalted butter, melted
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder

Instructions

  1. Prepare Baking Sheets: Line two baking sheets with parchment paper and set aside to prevent sticking and facilitate easy transfer of breadsticks.
  2. Make the Dough: In a stand mixer bowl fitted with a dough hook, combine warm water, instant yeast, sugar, melted butter, and sea salt. Gradually add bread flour while mixing on low speed, then increase to medium speed and knead for 10-15 minutes until the dough becomes tacky and elastic. Add extra flour one tablespoon at a time if the dough is too sticky.
  3. First Rise: Transfer the dough to a lightly oiled bowl, cover with plastic wrap, and let it rest in a warm spot until doubled in size, around 1 to 1 1/2 hours. Warmer environments speed up proofing.
  4. Shape Breadsticks: Once risen, divide the dough into 12 equal portions (about 57 grams each). Roll each piece into an 8-inch log. Arrange the logs on the parchment-lined baking sheets, spacing them about 2 inches apart. Cover and let rise again until doubled in size, approximately another 1 to 1 1/2 hours.
  5. Bake: Preheat your oven to 400°F (204°C). Bake the breadsticks for 12 to 14 minutes until golden brown on top.
  6. Finish and Serve: Remove breadsticks from the oven and immediately brush with melted butter. Mix kosher salt and garlic powder and sprinkle evenly over each breadstick. Serve warm for best flavor.
  7. Reheating: To refresh leftovers, place breadsticks on a baking sheet and heat in a preheated 425°F (218°C) oven for 4-5 minutes until warmed through. Optionally, re-brush with butter and sprinkle again with garlic powder and salt.

Notes

  • Ensure water is between 100-110°F to activate yeast without killing it.
  • If dough is sticky, add flour gradually to avoid dry breadsticks.
  • Use a kitchen scale for accurate dough portions for consistent breadstick size.
  • Proofing times vary depending on kitchen temperature—allow for flexibility.
  • Serving breadsticks warm enhances their softness and flavor.
  • Leftover breadsticks reheat well in the oven, maintaining texture better than microwaving.
