- 1½ tablespoons fresh lime juice
- ½ cup finely chopped fresh cilantro
- Pinch red pepper flakes or ¼ diced jalapeño (optional)
Instructions
- Cook the rice: In a medium saucepan with a lid, combine the rinsed jasmine rice, water, and 1 teaspoon of olive oil. Bring the mixture to a boil over medium-high heat. Once boiling, cover the saucepan with the lid and reduce the heat to low to maintain a simmer. Cook for 20 minutes, or follow the cooking time specified on your rice package, until the water is absorbed and the rice is tender.
- Fluff and season: Remove the lid and use a fork to fluff the rice gently. Add the finely minced garlic, chopped scallions, and lime zest to the rice, stirring them through to distribute evenly. Allow the mixture to cool for about one minute.
- Finish with lime and cilantro: Stir in the remaining 2 teaspoons of olive oil, ¼ teaspoon salt, fresh lime juice, chopped cilantro, and the optional red pepper flakes or diced jalapeño if using. Mix thoroughly to combine all ingredients. Taste and adjust the seasoning if necessary before serving.
