Description
Chocolate Chia Seed Pudding is a delicious and healthy dessert that satisfies chocolate cravings with minimal ingredients. Made with cacao powder, maple syrup, vanilla, milk, and chia seeds, this pudding is easy to prepare and naturally thickens as the chia seeds absorb the liquid. It’s a versatile and nutritious treat that can be customized with various toppings like fresh fruit, chocolate shavings, whipped cream, and nuts.
Ingredients
Main Ingredients
- 2 tablespoons cacao powder
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup milk (dairy or dairy-free)
- ¼ cup chia seeds
Garnish
- Raspberries (or other fruit)
- Chocolate shavings
- Coconut whipped cream
- Nuts and seeds
Instructions
- Combine ingredients. In a medium-size bowl, add the cacao powder, maple syrup, vanilla extract, milk, and chia seeds. Whisk together until all ingredients are well combined.
- Allow chia seeds to gel. Leave the mixture in the bowl without stirring for 15 minutes so the chia seeds begin to absorb the liquid and expand, forming a gel-like texture.
- Whisk again. After 15 minutes, whisk the mixture again to break up any clumps and ensure even distribution of chia seeds.
- Refrigerate. Cover the bowl with a lid or plastic wrap and place it in the refrigerator overnight or for a minimum of 4 hours to allow the pudding to fully thicken and develop flavor.
- Serve and garnish. Remove the pudding from the refrigerator, stir lightly with a spoon, and serve into small dessert glasses. Top with your favorite fruits such as raspberries, chocolate shavings, coconut whipped cream, and a sprinkle of nuts and seeds for added flavor and texture.
Notes
- This pudding can be made with any type of milk, including almond, soy, oat, or dairy milk, to suit dietary preferences.
- For a sweeter pudding, increase the maple syrup slightly or add a drizzle on top when serving.
- Chia seeds absorb liquid as they sit, so stirring after 15 minutes helps prevent clumping and ensures a smooth texture.
- Pudding keeps well covered in the refrigerator for up to 3 days, making it a great make-ahead dessert or snack.
- Add-ins like shredded coconut or a pinch of cinnamon can enhance the flavor.
