Ingredients
Vinaigrette Ingredients
- 2/3 cup olive oil (can substitute with avocado oil or vegetable oil)
- 3 tablespoons red vinegar
- 3 tablespoons honey
- 1 chipotle pepper in adobo sauce plus 1 teaspoon of the sauce (adjust for desired spice level)
- 2 cloves garlic
- 2 tablespoons lime juice (about 1 lime)
- 1 teaspoon oregano
- 1 teaspoon cumin
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Combine Ingredients: Add all the dressing ingredients—olive oil, red vinegar, honey, chipotle pepper with adobo sauce, garlic cloves, lime juice, oregano, cumin, kosher salt, and black pepper—to a high-speed blender or food processor.
- Blend Thoroughly: Blend on high for 1-2 minutes until all ingredients are fully combined and the chipotle is broken down into a smooth vinaigrette. Alternatively, mince the garlic finely and place all ingredients into a jar with a lid; shake vigorously until mixed.
- Taste and Adjust: Taste the vinaigrette and adjust the seasoning if needed. For a deeper, smoky, and spicier flavor, add an additional chipotle pepper in adobo and blend again.
- Serve or Store: Use immediately by drizzling over your favorite salad or grilled vegetables. If not using right away, store the vinaigrette in a mason jar or airtight container in the refrigerator for up to one week.
