Description

A smoky, tangy Chipotle Vinaigrette that’s easy to make and perfect for dressing salads or drizzling over grilled vegetables. Made with chipotle peppers in adobo, lime juice, and a blend of spices, this vinaigrette brings a delicious smoky heat and vibrant flavor to your dishes. Ready in just 10 minutes and can be stored in the fridge for later use.

Ingredients

Vinaigrette Ingredients

  • 2/3 cup olive oil (can substitute with avocado oil or vegetable oil)
  • 3 tablespoons red vinegar
  • 3 tablespoons honey
  • 1 chipotle pepper in adobo sauce plus 1 teaspoon of the sauce (adjust for desired spice level)
  • 2 cloves garlic
  • 2 tablespoons lime juice (about 1 lime)
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine Ingredients: Add all the dressing ingredients—olive oil, red vinegar, honey, chipotle pepper with adobo sauce, garlic cloves, lime juice, oregano, cumin, kosher salt, and black pepper—to a high-speed blender or food processor.
  2. Blend Thoroughly: Blend on high for 1-2 minutes until all ingredients are fully combined and the chipotle is broken down into a smooth vinaigrette. Alternatively, mince the garlic finely and place all ingredients into a jar with a lid; shake vigorously until mixed.
  3. Taste and Adjust: Taste the vinaigrette and adjust the seasoning if needed. For a deeper, smoky, and spicier flavor, add an additional chipotle pepper in adobo and blend again.
  4. Serve or Store: Use immediately by drizzling over your favorite salad or grilled vegetables. If not using right away, store the vinaigrette in a mason jar or airtight container in the refrigerator for up to one week.

Notes

  • You can substitute olive oil with avocado oil or vegetable oil based on preference or availability.
  • The amount of chipotle and adobo sauce can be adjusted depending on how spicy and smoky you like your vinaigrette.
  • This vinaigrette pairs exceptionally well with grilled vegetables, tacos, and hearty salads.
  • Shake or stir the vinaigrette before each use as separation may occur.
  • Store in the refrigerator and consume within a week for optimal flavor and freshness.
