Ingredients

  • 3 boneless, skinless chicken breasts
  • 1/2 cup flour
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup additional chicken stock
  • 1 lemon, juiced and zested
  • 1/4 cup grated Parmesan cheese
  • Angel hair pasta, for serving (optional)

Instructions

  1. Cut chicken breasts into 1-inch wide strips or bite-sized pieces.
  2. In a shallow bowl, whisk together flour, onion powder, garlic powder, salt, and pepper.
  3. Dredge chicken pieces in the flour mixture until evenly coated. Set aside.
  4. In a large skillet, heat olive oil and butter over medium heat.
  5. Add the chicken in batches if needed and cook until golden brown on all sides, about 5–7 minutes. Transfer to a platter and keep warm.
  6. Add minced garlic to the pan and sauté for 1 minute.
  7. Whisk in 1 cup chicken broth, scraping up browned bits from the pan. Cook for 2–3 minutes to reduce slightly.
  8. Add the remaining 1/2 cup chicken stock, lemon juice, and lemon zest. Bring to a gentle boil, then reduce heat and simmer for 5 minutes.
  9. Stir in grated Parmesan cheese until melted and incorporated.
  10. Return chicken to the skillet and coat with the sauce. Serve warm over angel hair pasta, if desired.
