Description
Skip the takeout and whip up this creamy and comforting Chicken Fettuccine Alfredo in just 30 minutes. Tender chicken breast is served over rich fettuccine pasta tossed in a velvety parmesan cream sauce.
Ingredients
- 2 tablespoons olive oil
- 3 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- 8 ounces fettuccine pasta
- 8 tablespoons salted butter
- 1 cup heavy cream
- 1 cup half and half
- Juice and zest of 1 lemon
- 2 cups freshly grated parmesan cheese
- 1/8 teaspoon nutmeg
- Kosher salt and fresh ground pepper, to taste
- Fresh chopped parsley, if desired
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- In a small bowl, whisk together garlic powder, salt, and pepper. Sprinkle evenly over the chicken breasts.
- Add chicken to the skillet and cook until golden on one side. Flip and continue cooking until internal temperature reaches 165˚F. Transfer to a platter and keep warm.
- Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to package directions until al dente. Drain and set aside.
- Wipe the skillet clean and melt butter over medium heat.
- Whisk in heavy cream and half and half. Heat to a simmer, then remove from heat and whisk in lemon juice and zest.
- Stir in 1 1/2 cups of the parmesan cheese until the sauce is smooth. Add nutmeg and season with salt and pepper to taste.
- Add the cooked pasta and remaining 1/2 cup parmesan to the sauce. Toss well until the sauce thickens and coats the pasta.
- Slice the cooked chicken across the grain and place over the pasta.
- Garnish with fresh chopped parsley and extra parmesan, if desired. Serve immediately.
Notes
- Use freshly grated parmesan for the best texture and flavor.
- Don’t boil the sauce after adding cheese to prevent curdling.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Reheat gently with a splash of cream or milk to loosen the sauce.
