Description

A creamy and comforting casserole made with seasoned chicken, broccoli, a cheesy sauce, and topped with crispy Ritz crackers for added crunch.


Ingredients

  • For the Casserole:
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon curry powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups broccoli florets
  • 1 (10.5 oz) can condensed cream of broccoli cheese soup
  • 1 (10.5 oz) can condensed cream of chicken soup
  • ½ cup sour cream
  • ¼ cup milk
  • 1 teaspoon lemon juice
  • 2 cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers
  • 1 tablespoon olive oil

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F. Spray or brush an 8×8-inch casserole dish with olive oil or cooking spray.
  2. Season and Cook the Chicken: Season the chicken cubes with garlic powder, onion powder, curry powder, salt, and pepper. Toss to coat evenly. In a large skillet over medium heat, cook the chicken until slightly browned and cooked through, about 5-7 minutes. Transfer the chicken to a plate and set aside.
  3. Cook the Broccoli: Bring a pot of water to a boil. Add the broccoli florets and cook until fork-tender, about 5 minutes. Drain and set aside.
  4. Prepare the Casserole Mixture: In a mixing bowl, stir together the canned soups, sour cream, milk, lemon juice, cooked chicken, and broccoli until well combined. Add 1½ cups of shredded cheddar cheese and stir to incorporate.
  5. Assemble the Casserole: Transfer the chicken and broccoli mixture into the prepared baking dish. Top with crumbled Ritz crackers and sprinkle the remaining cheddar cheese over the casserole. Feel free to add extra cheese if desired.
  6. Bake: Bake the casserole uncovered in the preheated oven for 30-35 minutes, or until the Ritz crackers are golden brown and the casserole is hot and bubbly.
