Description

These Cherry Chip Cheesecake Bites are an irresistible treat, featuring a creamy cheesecake filling with sweet cherry chip flavor, all wrapped in a smooth candy coating. A drizzle of white almond bark adds a finishing touch to these bite-sized delights, making them perfect for any occasion.

Ingredients

  • 15.25 ounces cherry chip cake mix
  • 8 ounces cream cheese, softened
  • 12 ounces bright pink candy wafer melts
  • 4 ounces white almond bark

Instructions

  1. Heat treat cake mix: Pour the dry cake mix into a medium-sized heat-safe bowl. Microwave in two 30-second intervals, stirring in between. Let the cake mix cool completely.
  2. Mix cream cheese: In a medium-sized mixing bowl, use a handheld mixer to beat the cream cheese for 2 to 2½ minutes until completely smooth.
  3. Combine cake mix and cream cheese: Sprinkle the cooled cake mix over the cream cheese. Mix until fully incorporated and the desired consistency is reached.
  4. Chill the mixture: Cover the cream cheese mixture tightly and chill in the refrigerator for 2 hours.
  5. Shape the bites: Line a baking sheet with parchment paper. Using a 1-tablespoon cookie scoop, scoop the cheesecake dough, roll into a ball, and place on the prepared baking sheet.
  6. Melt the candy wafers: Microwave the candy wafer melts in 30-second intervals, stirring after each, until smooth.
  7. Coat the cheesecake bites: Roll the cheesecake balls in the melted candy coating. Gently tap to remove excess coating and place them back on the baking sheet.
  8. Drizzle with almond bark: Microwave the white almond bark in 30-second intervals, stirring until smooth. Drizzle over the coated cheesecake bites using a spoon or small candy dipper.
  9. Chill until set: Return the bites to the refrigerator until ready to serve.

Notes

  • Be sure to heat treat the cake mix to avoid any risks from consuming raw flour.
  • You can use any other color of candy wafers to customize the look of your cheesecake bites.
  • For added decoration, consider sprinkling some extra cherry chips or edible glitter on top after drizzling with almond bark.
