Description

These Cheesy Baked Yellow Squash Rounds are the perfect savory side dish. The tender squash is topped with melty mozzarella and Parmesan, creating a delicious and easy-to-make snack or side.

Ingredients

  • 2 medium yellow squash
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Slice the Squash: Wash the yellow squash and slice it into ¼-inch thick rounds.
  2. Season the Rounds: In a large bowl, toss the squash slices with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
  3. Arrange and Top with Cheese: Place the seasoned squash slices on a parchment-lined baking sheet. Top each round with a sprinkle of mozzarella and Parmesan cheese.
  4. Bake: Bake in a preheated oven at 400°F (200°C) for 20–25 minutes, or until the cheese is bubbly and golden brown on the edges.
  5. Optional: Garnish with a pinch of fresh parsley or red pepper flakes for added flavor.
  6. Serve: Enjoy hot as a side dish or a healthy snack.

Notes

  • You can use zucchini in place of yellow squash for a slight variation.
  • For extra crunch, broil the squash for the last 2-3 minutes of baking.
