Ingredients

Pasta

  • 4 ounces uncooked pasta (spaghetti recommended)

Sauce

  • 1 (5 ounce) can tuna, drained (preferably packed in oil)
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. While the pasta is cooking, prepare the sauce ingredients.
  2. Sauté Garlic: When the pasta is nearing completion, heat the olive oil in a small pan over medium heat. Add the minced garlic and cook for about 30 seconds, stirring frequently until fragrant but not browned.
  3. Add Tuna and Flavorings: Stir in the drained tuna, lemon juice, and chopped parsley into the garlic oil. Allow the mixture to heat through gently, about 1-2 minutes, so the flavors meld together.
  4. Combine Pasta and Sauce: Reserve a couple of tablespoons of pasta cooking water and add it to the tuna sauce to loosen it up. Drain the pasta and toss it in the pan with the sauce until evenly coated.
  5. Season and Serve: Taste the pasta and season with salt and black pepper as desired. Optionally, top with freshly grated parmesan cheese and a sprinkle of lemon zest for extra brightness and flavor. Serve immediately.
