Description
These incredibly soft and fluffy garlic cheese rolls are filled with melted mozzarella cheese and topped with a rich garlic butter sauce. Perfect for any occasion, they’re so addictive you won’t be able to stop at just one!
Ingredients
- For the Garlic Butter:
- 1 head of garlic
- Sprinkle of salt
- 30g olive oil
- 50g butter
- 1 tablespoon fresh parsley, chopped
- For the Dough:
- 90g warm milk
- 7g active dry yeast
- 25g honey
- 200g all-purpose flour
- 50g bread flour
- 20g milk powder (optional)
- 25g butter, softened
- 2 egg yolks
- 1 1/2 teaspoons salt
- 1 tablespoon sugar
- For the Filling:
- 200g mozzarella cheese, shredded
- Garlic butter (prepared earlier)
- For the Egg Wash:
- 1 egg, beaten
Instructions
- Roast the Garlic: Place the garlic head in a ramekin, cut off the top, drizzle with olive oil, sprinkle with salt, and cover with aluminum foil. Roast at 160°C (320°F) for 2 hours, until the garlic is soft and buttery.
- Prepare the Garlic Butter: Once the garlic is roasted, mix it with softened butter, chopped parsley, and 2 tablespoons of the garlic oil from the ramekin. Set aside.
- Prepare the Yeast Mixture: In a bowl, combine warm milk, active dry yeast, and honey. Let it proof for about 10 minutes, or until frothy.
- Make the Dough: In a large mixing bowl, combine all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, egg yolks, and the yeast mixture.
- Knead the Dough: Using a dough hook attachment, knead the dough on medium speed for 15-20 minutes until soft and smooth.
- Proof the Dough: Place the dough in a covered bowl and let it proof in a warm place (around 29°C or 85°F) for about 1 hour and 30 minutes, or until it doubles in size.
- Roll Out the Dough: Roll the dough out to about 1/4 cm (or 1/8 inch) thickness. Spread the prepared garlic butter evenly over the surface.
- Add the Cheese: Sprinkle the shredded mozzarella cheese over the dough. Then tightly roll the dough into a log.
- Cut the Dough: Using a knife or dental floss, cut the dough into 6 equal portions.
- Second Proof: Place the rolls on a baking sheet, cover, and let them proof for another 30 minutes, or until puffy.
- Bake: Preheat the oven to 175°C (350°F). Brush the rolls with egg wash and bake for 20-25 minutes, checking after 20 minutes for a golden, slightly browned top.
- Decorate and Serve: After baking, brush the rolls with the leftover garlic butter and sprinkle with chopped parsley before serving.
Notes
- For extra flavor, sprinkle the rolls with Parmesan cheese before baking.
- You can store any leftover rolls in an airtight container for up to 2-3 days, or freeze them for longer storage.
- If you prefer a lighter texture, use all-purpose flour instead of bread flour.
