Description
These buttery egg noodles are rich with garlic, brightened by lemon juice, and finished with Parmesan and fresh parsley — a quick and comforting side or main dish in just 20 minutes.
Ingredients
- 12 ounces wide egg noodles (Country Pasta brand or similar)
- 1/2 cup salted butter
- 6 cloves garlic, minced
- 1 cup reserved pasta water
- Juice of 1 lemon
- 3/4 cup grated Parmesan cheese
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Bring a large pot of salted water to a boil and cook egg noodles according to package directions. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium-low heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Remove from heat.
- Add 1 cup of reserved pasta water and lemon juice to the skillet. Season with salt and pepper. Stir to combine. (Add up to 1/4 cup more pasta water if you prefer a thinner sauce.)
- Return the skillet to low heat, then add cooked noodles and toss to coat in the butter sauce.
- Sprinkle in Parmesan cheese and stir until melted and combined.
- Garnish with fresh parsley if desired and serve warm.
Notes
- Use freshly grated Parmesan for best texture and flavor.
- Try adding sautéed mushrooms or cooked chicken for a heartier dish.
- Adjust lemon juice to taste for more or less brightness.
