Description

These buttery egg noodles are rich with garlic, brightened by lemon juice, and finished with Parmesan and fresh parsley — a quick and comforting side or main dish in just 20 minutes.


Ingredients

  • 12 ounces wide egg noodles (Country Pasta brand or similar)
  • 1/2 cup salted butter
  • 6 cloves garlic, minced
  • 1 cup reserved pasta water
  • Juice of 1 lemon
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook egg noodles according to package directions. Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium-low heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Remove from heat.
  3. Add 1 cup of reserved pasta water and lemon juice to the skillet. Season with salt and pepper. Stir to combine. (Add up to 1/4 cup more pasta water if you prefer a thinner sauce.)
  4. Return the skillet to low heat, then add cooked noodles and toss to coat in the butter sauce.
  5. Sprinkle in Parmesan cheese and stir until melted and combined.
  6. Garnish with fresh parsley if desired and serve warm.

  • Use freshly grated Parmesan for best texture and flavor.
  • Try adding sautéed mushrooms or cooked chicken for a heartier dish.
