Ingredients
- 16 oz linguini
- 5 tablespoons vegan butter or traditional butter
- 3 tablespoons red miso
- 1 1/2 cups reserved pasta water
- 1 cup vegan parmesan or traditional parmesan
- Garnish: Sliced seaweed
Instructions
- Bring a large pot of salted water to a boil. Cook linguini until just al dente. Reserve 1 1/2 cups of pasta water, then drain the pasta.
- In a pan over medium heat, melt the butter. Whisk continuously as it sizzles and begins to brown, about 2–3 minutes. Watch for small brown flecks and a nutty aroma. Do not overcook.
- Add the miso and reserved pasta water to the pan. Bring to a boil while whisking until well combined.
- Add the cooked pasta and parmesan to the sauce. Stir vigorously to create a smooth, creamy texture. Continue cooking briefly until everything is well combined and heated through.
- Serve immediately, garnished with thinly sliced seaweed.
