Ingredients

Vegetables

  • 400 g Broccoli, chopped into large chunks
  • 400 g Cauliflower, chopped into large chunks
  • 1 Onion, peeled and finely chopped
  • 2 Cloves Garlic, crushed

Liquids & Dairy

  • 750 ml Good quality stock (vegetable or chicken)
  • 300 ml Milk
  • 120 g Cheddar cheese, grated
  • 50 g Cheddar cheese, grated (for topping)

Seasoning & Toppings

  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Croutons (homemade or store bought), for serving


Instructions

  1. Prepare Vegetables: Wash the broccoli and cauliflower thoroughly. Chop both vegetables into large chunks. Peel and finely slice the onion. Crush the garlic cloves to release their flavor.
  2. Combine Ingredients: In a large saucepan, add the chopped broccoli, cauliflower, sliced onions, crushed garlic, and pour in the stock. Season generously with salt and freshly ground black pepper to taste.
  3. Cook the Vegetables: Bring the mixture to a boil over medium-high heat, then reduce the heat to let it simmer. Cook uncovered for 15 minutes or until the vegetables are tender and cooked through but still retain some bite.
  4. Blend the Soup: Remove the saucepan from the heat. Add the milk and 120 g of grated cheddar cheese to the pot. Using a hand blender or transferring to a blender, blend the soup until it becomes smooth and creamy.
  5. Heat Through: Return the blended soup to the stove if needed and gently warm it through again, stirring occasionally to prevent sticking or burning.
  6. Serve: Ladle the hot soup into bowls. Garnish each serving with the remaining 50 g grated cheddar cheese and sprinkle croutons on top for added crunch and flavor.
