Description

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 3/4 cups milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 to 1 1/2 cups fresh or frozen blueberries

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  2. In a separate bowl or measuring cup, combine milk, vegetable oil, eggs, vanilla, and almond extract. Whisk until smooth.
  3. Pour wet ingredients into the dry ingredients and whisk gently. Batter should be mostly smooth with a few small lumps.
  4. Let the batter rest while preheating your waffle iron.
  5. Once the waffle iron is hot, fold in the blueberries.
  6. Cook waffles according to your waffle maker’s instructions, making sure blueberries are evenly distributed in each batch.
  7. Serve warm with butter, syrup, or extra blueberries.

Notes

  • If using frozen blueberries, do not thaw to prevent streaking in the batter.
