Description

Ingredients

  • 150g cream cheese, softened
  • 2 tbsp caster sugar
  • 1 tsp vanilla extract
  • ½ cup blueberries (fresh or frozen)
  • 1 loaf day-old brioche
  • 1 egg
  • ½ cup milk
  • ½ cup cream
  • 1 tsp cinnamon
  • Butter (for frying)
  • Extra blueberries (for serving)
  • Icing sugar (for serving)
  • Maple syrup (for serving)

Instructions

  1. Mix cream cheese, sugar, and vanilla extract in a bowl until smooth. Gently fold in the blueberries.
  2. Slice the brioche into 8 slices and form 4 sandwiches by spreading the cream cheese mixture between two slices of bread.
  3. In a separate bowl, whisk together the egg, milk, cream, and cinnamon to make the custard mixture.
  4. Dip each sandwich into the custard, ensuring it’s soaked for 20 seconds on each side.
  5. Heat a pan over medium heat and melt some butter. Fry the sandwiches for 3–4 minutes on each side or until golden brown.
  6. Serve with extra blueberries, a dusting of icing sugar, and a drizzle of maple syrup.
