Ingredients
- 150g cream cheese, softened
- 2 tbsp caster sugar
- 1 tsp vanilla extract
- ½ cup blueberries (fresh or frozen)
- 1 loaf day-old brioche
- 1 egg
- ½ cup milk
- ½ cup cream
- 1 tsp cinnamon
- Butter (for frying)
- Extra blueberries (for serving)
- Icing sugar (for serving)
- Maple syrup (for serving)
Instructions
- Mix cream cheese, sugar, and vanilla extract in a bowl until smooth. Gently fold in the blueberries.
- Slice the brioche into 8 slices and form 4 sandwiches by spreading the cream cheese mixture between two slices of bread.
- In a separate bowl, whisk together the egg, milk, cream, and cinnamon to make the custard mixture.
- Dip each sandwich into the custard, ensuring it’s soaked for 20 seconds on each side.
- Heat a pan over medium heat and melt some butter. Fry the sandwiches for 3–4 minutes on each side or until golden brown.
- Serve with extra blueberries, a dusting of icing sugar, and a drizzle of maple syrup.

- Brioche: Using day-old brioche helps the bread soak up the custard without falling apart.
- Frozen Blueberries: If you use frozen blueberries, don’t thaw them to avoid excess moisture in the filling.
