Description

These Birthday Cake Protein Bars are a delicious and nutritious treat, combining almond and oat flours with almond butter, vanilla protein powder, and festive rainbow sprinkles. Perfect for a protein-packed snack or a celebratory sweet bite, these bars require no baking and are quick to prepare, making them ideal for busy lifestyles.


Ingredients

Dry Ingredients

  • 1 cup almond flour
  • 1/2 cup oat flour
  • 1/2 cup vanilla protein powder
  • Dash of sea salt

Wet Ingredients

  • 1/2 cup almond butter or cashew butter
  • 1/3 to 1/2 cup maple syrup
  • 1 1/2 teaspoons vanilla bean paste
  • 3 tablespoons milk of choice (more if needed)

Add-ins

  • 2 to 3 tablespoons rainbow sprinkles


Instructions

  1. Combine Dry and Wet Ingredients: In a medium-sized bowl, mix together all ingredients except for the rainbow sprinkles and milk. This includes the almond flour, oat flour, protein powder, almond or cashew butter, maple syrup, vanilla bean paste, and sea salt.
  2. Form the Dough: Stir the mixture to combine, then use your hands to knead until a dough forms. Slowly add milk little by little until the mixture reaches a thick, pliable, but not overly wet consistency. Fold in 2 tablespoons of the rainbow sprinkles evenly.
  3. Press into Pan: Line an 8×8 inch pan with parchment paper. Press the dough very firmly and evenly into the pan. For thicker bars, avoid pressing the dough all the way to the edges.
  4. Add Sprinkles and Set: Press the remaining sprinkles onto the surface of the bars to decorate. Place the pan in the freezer and let it set for about 30 minutes.
  5. Cut and Store: Remove the set bars from the freezer, lift out using the parchment paper, and cut into 8 bars. Store the bars in the refrigerator to maintain firmness and freshness.
