This Best Grilled Cheese Burrito combines savory ground beef, cheesy fried rice, nacho cheese sauce, and spicy mayo, all wrapped in a crispy tortilla. It’s a delicious Tex-Mex twist on the classic grilled cheese, offering a perfect balance of comfort and spice.
Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 onion, diced
- 1 teaspoon salt and black pepper (adjust to taste)
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ cup tomato sauce
- 4 large flour tortillas
- 3 tablespoons spicy mayo
- 1 cup fried rice
- 1 cup nacho cheese sauce
- 1 cup sour cream
- 1 cup tortilla chips (crushed)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for about 5 minutes until softened and translucent. Add ground beef to the skillet, cooking until fully browned and breaking up large pieces as you cook.
- Season the beef with salt, smoked paprika, and oregano. Stir to combine and allow the spices to bloom for 1 minute. Pour in the tomato sauce, reduce the heat, and simmer for 5 minutes, letting the flavors meld.
- Lay each flour tortilla flat. Spread 1 tablespoon of spicy mayo down the center of each tortilla. Add a spoonful of fried rice, drizzle with nacho cheese sauce, and follow with a dollop of sour cream. Sprinkle with crushed tortilla chips and top with a generous portion of seasoned ground beef.
- Fold in the sides of the tortilla and roll it up tightly from the bottom to secure the filling.
- Heat a non-stick skillet or griddle over medium heat. Optionally, sprinkle shredded Mexican cheese blend directly onto the hot surface. Place the burrito seam-side down on top of the cheese and grill for 2-3 minutes per side, until the cheese forms a crispy, golden crust.
- Serve the grilled burritos hot with extra spicy mayo on the side for dipping.
