Description

This Best Grilled Cheese Burrito combines savory ground beef, cheesy fried rice, nacho cheese sauce, and spicy mayo, all wrapped in a crispy tortilla. It’s a delicious Tex-Mex twist on the classic grilled cheese, offering a perfect balance of comfort and spice.


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 teaspoon salt and black pepper (adjust to taste)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ cup tomato sauce
  • 4 large flour tortillas
  • 3 tablespoons spicy mayo
  • 1 cup fried rice
  • 1 cup nacho cheese sauce
  • 1 cup sour cream
  • 1 cup tortilla chips (crushed)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for about 5 minutes until softened and translucent. Add ground beef to the skillet, cooking until fully browned and breaking up large pieces as you cook.
  2. Season the beef with salt, smoked paprika, and oregano. Stir to combine and allow the spices to bloom for 1 minute. Pour in the tomato sauce, reduce the heat, and simmer for 5 minutes, letting the flavors meld.
  3. Lay each flour tortilla flat. Spread 1 tablespoon of spicy mayo down the center of each tortilla. Add a spoonful of fried rice, drizzle with nacho cheese sauce, and follow with a dollop of sour cream. Sprinkle with crushed tortilla chips and top with a generous portion of seasoned ground beef.
  4. Fold in the sides of the tortilla and roll it up tightly from the bottom to secure the filling.
  5. Heat a non-stick skillet or griddle over medium heat. Optionally, sprinkle shredded Mexican cheese blend directly onto the hot surface. Place the burrito seam-side down on top of the cheese and grill for 2-3 minutes per side, until the cheese forms a crispy, golden crust.
  6. Serve the grilled burritos hot with extra spicy mayo on the side for dipping.
