Description

This classic Southern peach cobbler is made with juicy peaches and topped with a buttery, golden crust. The perfect summer dessert, best served warm with a scoop of ice cream!


Ingredients

  • For the Peach Filling:
  • 8 fresh peaches, peeled, pitted, and sliced into thin wedges
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • For the Cobbler Topping:
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 12 tablespoons unsalted butter, chilled and cut into small pieces
  • ½ cup boiling water
  • For Sprinkling:
  • 3 tablespoons granulated sugar

Instructions

  1. Preheat the oven to 400°F (425°F if using a light-colored pan).
  2. Prepare the Peach Filling: In a large bowl, combine the peaches, ¼ cup granulated sugar, ¼ cup light brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, then pour the mixture into a 2-quart baking dish. Bake in the preheated oven for 10 minutes.
  3. Prepare the Cobbler Topping: In a large bowl, combine flour, sugars, baking powder, and salt. Blend in the butter with your fingertips or a pastry blender until the mixture resembles coarse meal. Stir in boiling water until just combined.
  4. After 10 minutes, remove the peaches from the oven and drop spoonfuls of the cobbler topping over them.
  5. Sprinkle the entire cobbler with the remaining 3 tablespoons of sugar. Place the baking dish on a baking sheet to catch any drips and bake for about 30 minutes, until the topping is golden.
