Description
This classic Southern peach cobbler is made with juicy peaches and topped with a buttery, golden crust. The perfect summer dessert, best served warm with a scoop of ice cream!
Ingredients
- For the Peach Filling:
- 8 fresh peaches, peeled, pitted, and sliced into thin wedges
- ¼ cup granulated sugar
- ¼ cup light brown sugar
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 2 teaspoons cornstarch
- For the Cobbler Topping:
- 2 cups all-purpose flour
- ½ cup granulated sugar
- ½ cup light brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 12 tablespoons unsalted butter, chilled and cut into small pieces
- ½ cup boiling water
- For Sprinkling:
- 3 tablespoons granulated sugar
Instructions
- Preheat the oven to 400°F (425°F if using a light-colored pan).
- Prepare the Peach Filling: In a large bowl, combine the peaches, ¼ cup granulated sugar, ¼ cup light brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, then pour the mixture into a 2-quart baking dish. Bake in the preheated oven for 10 minutes.
- Prepare the Cobbler Topping: In a large bowl, combine flour, sugars, baking powder, and salt. Blend in the butter with your fingertips or a pastry blender until the mixture resembles coarse meal. Stir in boiling water until just combined.
- After 10 minutes, remove the peaches from the oven and drop spoonfuls of the cobbler topping over them.
- Sprinkle the entire cobbler with the remaining 3 tablespoons of sugar. Place the baking dish on a baking sheet to catch any drips and bake for about 30 minutes, until the topping is golden.
- Optional: Serve with a scoop of ice cream and enjoy!
Notes
- For extra flavor, add a dash of vanilla extract to the peach mixture.
- You can use frozen peaches if fresh peaches aren’t available, but be sure to thaw and drain them first.
- For a more decadent treat, add a bit of cinnamon sugar to the topping before baking.
