These Best Ever Chocolate Scotcheroos are a delicious no-bake dessert that combines creamy peanut butter, rich chocolate, and sweet butterscotch over a crispy rice cereal base. Ingredients
- 6 cups crispy rice cereal
- 1 cup light corn syrup
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 1 1/2 cups chocolate chips
- 1 1/2 cups butterscotch chips
Instructions
- Line a 9 x 13-inch baking dish with parchment paper and set aside.
- Add the crispy rice cereal to a large mixing bowl and set it aside.
- In a medium saucepan over low heat, combine the corn syrup and sugar. Whisk continuously to form a grainy paste.
- Once the paste forms, increase the heat and bring the mixture to a boil. Immediately remove from heat.
- Stir in the peanut butter until fully combined. Pour this mixture into the bowl with the cereal and stir using a heat-proof spatula or spoon.
- Grease your hands with butter or non-stick cooking spray. Press the scotcheroos mixture into the prepared baking dish evenly.
- In a microwaveable bowl, combine the chocolate and butterscotch chips. Microwave in 30-second intervals, stirring between each, until smooth.
- Pour the melted chocolate-butterscotch mixture over the top of the cereal bars. Use an offset spatula to spread it into an even layer.
- Refrigerate for 1 hour. Once chilled, remove from the refrigerator and let the scotcheroos come to room temperature for easier cutting.
