Description

These Best Ever Chocolate Scotcheroos are a delicious no-bake dessert that combines creamy peanut butter, rich chocolate, and sweet butterscotch over a crispy rice cereal base. Perfect for any occasion, these chewy, sweet, and salty bars are quick and easy to make, satisfying your cravings for a decadent treat!


Ingredients

  • 6 cups crispy rice cereal
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 1/2 cups chocolate chips
  • 1 1/2 cups butterscotch chips

Instructions

  1. Line a 9 x 13-inch baking dish with parchment paper and set aside.
  2. Add the crispy rice cereal to a large mixing bowl and set it aside.
  3. In a medium saucepan over low heat, combine the corn syrup and sugar. Whisk continuously to form a grainy paste.
  4. Once the paste forms, increase the heat and bring the mixture to a boil. Immediately remove from heat.
  5. Stir in the peanut butter until fully combined. Pour this mixture into the bowl with the cereal and stir using a heat-proof spatula or spoon.
  6. Grease your hands with butter or non-stick cooking spray. Press the scotcheroos mixture into the prepared baking dish evenly.
  7. In a microwaveable bowl, combine the chocolate and butterscotch chips. Microwave in 30-second intervals, stirring between each, until smooth.
  8. Pour the melted chocolate-butterscotch mixture over the top of the cereal bars. Use an offset spatula to spread it into an even layer.
  9. Refrigerate for 1 hour. Once chilled, remove from the refrigerator and let the scotcheroos come to room temperature for easier cutting.
  10. Slice into squares and enjoy!
