Description

This Beef Ramen Noodles Stir Fry is a quick and flavorful Asian-inspired dish made with ground beef, fresh vegetables, and ramen noodles tossed in a savory sriracha soy sauce.

Ingredients

  • 1 tbsp. vegetable oil (such as canola oil)
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • ½ head broccoli, cut into florets
  • 1 lb. ground beef
  • 6 oz ramen noodles (2 packets, seasoning packets discarded)
  • Salt and pepper, to taste
  • Sriracha sauce (for serving, optional)
  • ¼ cup soy sauce
  • 1 tbsp. brown sugar
  • 1 tbsp. apple cider vinegar
  • 2 tsp. sriracha
  • 1 clove garlic, minced
  • 1 scallion, chopped (optional, for garnish)

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, apple cider vinegar, sriracha, and minced garlic. Set aside.
  2. In a medium saucepan, bring water to a boil. Add ramen noodles and cook until tender, about 2 minutes. Drain and set aside.
  3. In a large skillet over medium heat, heat oil. Add onions, red bell pepper, and broccoli. Cook until tender, about 5 minutes. Remove vegetables from the skillet and set aside.
  4. Add ground beef to the skillet, season with salt and pepper, and cook until no longer pink, about 5 minutes. Drain excess fat.
  5. Return the cooked vegetables to the skillet with the beef.
  6. Add cooked ramen noodles and pour the prepared sauce over the mixture. Toss everything together until well combined and heated through.
  7. Taste and adjust seasoning with more salt and pepper if needed. Garnish with chopped scallions and serve with extra sriracha if desired.

Notes

  • Use low-sodium soy sauce to control the saltiness of the dish.
  • You can substitute ground beef with ground turkey or chicken for a leaner version.
  • Fresh garlic is recommended for best flavor, but garlic powder can be used in a pinch.
  • Add other vegetables like carrots or snap peas for extra crunch and color.
