Description

These Baked Chicken Chimichangas are a healthier twist on the classic, stuffed with shredded chicken, refried beans, cheese, salsa, and a touch of spice, then baked to crispy perfection. Perfect for a quick and satisfying dinner, these chimichangas offer all the flavor with none of the frying!


Ingredients

  • 2 cups cooked shredded chicken
  • 1 ⅓ cups refried beans
  • 1 ⅓ cups salsa (your favorite kind)
  • 2 teaspoons coriander (optional)
  • 1 tablespoon chili powder
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 6 green onions, chopped (or regular onion)
  • 23 jalapeños, diced with seeds (adjust to your spice preference)
  • 3 tablespoons butter, melted
  • 68 large taco-sized flour tortillas (8 inches)

Instructions

  1. Preheat the Oven:
  2. Preheat the oven to 400°F (200°C).
  3. Prepare the Filling:
  4. In a large bowl, mix together the shredded chicken, refried beans, salsa, coriander (if using), chili powder, shredded cheese, green onions, and diced jalapeños.
  5. Assemble the Chimichangas:
  6. Spread the filling in the center of each tortilla.
  7. Fold the bottom edge of the tortilla up over the filling, then fold in the sides. Roll up tightly to form a burrito shape, being careful not to overfill the tortilla.
  8. Bake the Chimichangas:
  9. Place the chimichangas seam-side down on a large baking sheet.
  10. Brush the tops generously with melted butter.
  11. Bake for 15 minutes, then carefully flip and bake for an additional 10 minutes, or until golden brown and crispy.
