- 2 teaspoons olive oil
- 3 tablespoons light brown sugar
- 1 tablespoon chili powder
- 1 teaspoon parsley flakes
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
Instructions
- Preheat oven to 425°F (218°C). Line a baking sheet with foil and spray with non-stick spray.
- Place the chicken breasts between two sheets of parchment paper and pound to an even thickness for uniform cooking.
- Drizzle both sides of the chicken breasts with olive oil.
- In a small bowl, combine brown sugar, chili powder, parsley flakes, salt, pepper, garlic powder, onion powder, and cumin.
- Sprinkle the seasoning mix generously over both sides of the chicken.
- Place the seasoned chicken breasts on the prepared baking sheet and bake for 20 minutes, or until internal temperature reaches 165°F (74°C).
- Remove from oven and tent loosely with foil. Let rest for 5 minutes before slicing and serving.
Notes
- Pounding the chicken to an even thickness ensures even cooking and juicier results.
- Letting the chicken rest before slicing helps retain juices.
- Great for slicing and using in salads, wraps, or sandwiches.
- Store leftovers in an airtight container in the fridge for up to 4 days.
