Ingredients

Filling

  • 4 oz cream cheese (softened to room temperature)
  • 1/3 cup buffalo wing sauce (such as Franks Red Hot)
  • 1/4 cup ranch dressing
  • 3 cups shredded cooked chicken (from a rotisserie chicken or leftovers)
  • 1 1/3 cups shredded cheddar cheese
  • 1/3 cup blue cheese crumbles

Wraps

  • 12 fajita or soft taco sized flour tortillas
  • Cooking spray (avocado oil spray recommended)

Dipping Sauce & Garnish

  • 1 cup ranch dressing
  • 2 – 3 Tbsp buffalo wing sauce
  • Additional blue cheese crumbles (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 450°F and line a rimmed baking sheet with foil to prevent sticking and make cleanup easier. Set aside for later use.
  2. Make the Filling: In a mixing bowl, combine the softened cream cheese, buffalo wing sauce, and ranch dressing. Use a hand mixer to beat until the mixture is smooth and creamy. A hand mixer helps incorporate the ingredients better than a whisk.
  3. Add Chicken and Cheeses: Stir the shredded cooked chicken, blue cheese crumbles, and shredded cheddar cheese into the creamy mixture until everything is well combined.
  4. Warm the Tortillas: Microwave the tortillas for 10-20 seconds until warmed. This softens them, making them easier to roll without cracking.
  5. Assemble the Taquitos: Place about 2 1/2 tablespoons of the chicken filling in a line along the bottom edge of each tortilla. Roll the tortilla tightly from the bottom up into a cigar-like shape.
