Ingredients
Filling
- 4 oz cream cheese (softened to room temperature)
- 1/3 cup buffalo wing sauce (such as Franks Red Hot)
- 1/4 cup ranch dressing
- 3 cups shredded cooked chicken (from a rotisserie chicken or leftovers)
- 1 1/3 cups shredded cheddar cheese
- 1/3 cup blue cheese crumbles
Wraps
- 12 fajita or soft taco sized flour tortillas
- Cooking spray (avocado oil spray recommended)
Dipping Sauce & Garnish
- 1 cup ranch dressing
- 2 – 3 Tbsp buffalo wing sauce
- Additional blue cheese crumbles (for garnish)
- Sliced green onions (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 450°F and line a rimmed baking sheet with foil to prevent sticking and make cleanup easier. Set aside for later use.
- Make the Filling: In a mixing bowl, combine the softened cream cheese, buffalo wing sauce, and ranch dressing. Use a hand mixer to beat until the mixture is smooth and creamy. A hand mixer helps incorporate the ingredients better than a whisk.
- Add Chicken and Cheeses: Stir the shredded cooked chicken, blue cheese crumbles, and shredded cheddar cheese into the creamy mixture until everything is well combined.
- Warm the Tortillas: Microwave the tortillas for 10-20 seconds until warmed. This softens them, making them easier to roll without cracking.
- Assemble the Taquitos: Place about 2 1/2 tablespoons of the chicken filling in a line along the bottom edge of each tortilla. Roll the tortilla tightly from the bottom up into a cigar-like shape.
- Prepare for Baking: Place the rolled taquitos seam-side down on the prepared baking sheet. Repeat with all tortillas and filling. Lightly spray each taquito with cooking spray to help them crisp up in the oven.
- Bake the Taquitos: Bake the taquitos in the preheated oven for 9-10 minutes. Carefully flip each one over and bake for an additional 3-5 minutes, or until they are golden brown and crispy on all sides.
- Prepare the Dipping Sauce: While the taquitos bake, whisk together 1 cup ranch dressing with 2 to 3 tablespoons buffalo wing sauce until well combined to make a flavorful buffalo ranch dipping sauce.
- Serve: Plate the baked taquitos and serve with the buffalo ranch dipping sauce. Garnish with extra blue cheese crumbles and sliced green onions for added flavor and presentation.
Notes
- Using warmed tortillas helps prevent breaking when rolling taquitos.
- For a spicier kick, add extra buffalo wing sauce to the filling or dipping sauce.
- Leftover rotisserie chicken works great for this recipe and saves prep time.
- Feel free to swap flour tortillas with corn tortillas, but they may be a bit more fragile.
- Cooking spray ensures a crispy exterior; avocado oil spray adds a subtle flavor and is a healthy option.
- Blue cheese crumbles can be omitted for a milder flavor or substituted with feta cheese.
