Description

A delightful no-bake cookie made with crunchy Rice Krispies, creamy peanut butter, and sweet white chocolate. These Avalanche Cookies are mixed with mini marshmallows and chocolate chips for an irresistible, chewy, and crispy treat. Perfect for holidays, parties, or a quick sweet fix!


Ingredients

  • 20 ounces white chocolate melting wafers
  • ¾ cup creamy peanut butter
  • ¼ teaspoon salt (optional)
  • 3½ cups Rice Krispies cereal
  • 2 cups mini marshmallows
  • 1 cup mini chocolate chips, divided
  • ½ cup marshmallow bits (optional topping)

Instructions

  1. Line a large baking sheet with parchment paper and set aside.
  2. In a microwave-safe bowl, melt the white chocolate wafers in 30-second intervals, stirring between each until fully melted.
  3. Stir in the peanut butter and salt until smooth and well combined.
  4. Fold in the Rice Krispies cereal, mini marshmallows, and half of the mini chocolate chips until evenly coated.
  5. Drop scoops of the mixture onto the prepared baking sheet.
  6. Sprinkle with remaining chocolate chips and marshmallow bits if using.
  7. Let cookies set at room temperature or refrigerate until firm, about 30 minutes.
