Ingredients
- For the Muffins:
- 2 1/2 cups apples (finely chopped, use Granny Smith and Gala)
- 2 cups all-purpose flour
- 1 teaspoon baking powder

Instructions
- Preheat Oven: Preheat the oven to 375°F. Spray a muffin tin with cooking spray or line with muffin liners.
- Prepare Dry Ingredients: In a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Cream Butter and Sugar: In a separate bowl, cream together softened butter, white sugar, and brown sugar. Beat in eggs and vanilla extract until smooth and well-mixed.
- Combine Ingredients: Stir in finely chopped apples and gradually add the dry ingredients. Mix until just combined. Set aside.
- Make Streusel Topping: In a small bowl, combine brown sugar, granulated sugar, cinnamon, oats, and flour. Drizzle in melted butter and mix until the mixture becomes crumbly.
- Assemble Muffins: Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the streusel topping evenly over the muffin batter.
- Bake: Bake at 375°F for about 20 minutes or until a toothpick inserted comes out clean.
