These deliciously moist Apple Spice Muffins are packed with finely chopped apples and topped with a cinnamon streusel, making them the perfect treat for fall or any time you want a comforting, flavorful muffin.

Ingredients

  • For the Muffins:
  • 2 1/2 cups apples (finely chopped, use Granny Smith and Gala)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • For the Streusel Topping:
  • 1/3 cup brown sugar (lightly packed)
  • 1 tablespoon granulated sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons old-fashioned oats
  • 2/3 cup all-purpose flour
  • 1/4 cup melted butter

Instructions

  1. Preheat Oven: Preheat the oven to 375°F. Spray a muffin tin with cooking spray or line with muffin liners.
  2. Prepare Dry Ingredients: In a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cream Butter and Sugar: In a separate bowl, cream together softened butter, white sugar, and brown sugar. Beat in eggs and vanilla extract until smooth and well-mixed.
  4. Combine Ingredients: Stir in finely chopped apples and gradually add the dry ingredients. Mix until just combined. Set aside.
  5. Make Streusel Topping: In a small bowl, combine brown sugar, granulated sugar, cinnamon, oats, and flour. Drizzle in melted butter and mix until the mixture becomes crumbly.
  6. Assemble Muffins: Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the streusel topping evenly over the muffin batter.
  7. Bake: Bake at 375°F for about 20 minutes or until a toothpick inserted comes out clean.
  8. Cool and Serve: Let the muffins cool for a few minutes before removing them from the tin. Enjoy!

Notes

  • For added flavor, you can sprinkle a little extra cinnamon on top of the streusel before baking.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
