Ingredients

  • For the Apple Cookies:
  • ¾ cup unsalted butter, softened
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger
  • ⅛ tsp nutmeg
  • ½ cup real maple syrup (not pancake syrup)
  • 1½ cups grated apple (Granny Smith or Honey Crisp preferred, but any apple works)
  • For the Maple Icing:
  • 1 cup powdered sugar
  • 1 tbsp heavy whipping cream
  • 1 tbsp melted butter
  • 1 tsp maple syrup

Instructions

  1. Make the Apple Cookies:
    1. Preheat Oven: Preheat your oven to 350°F. Line 2 large baking sheets with parchment paper and set aside.
    2. Cream Butter and Sugar: In a large bowl, beat together the softened butter and brown sugar with an electric mixer on medium-high speed until light and fluffy.
    3. Add Wet Ingredients: Add the vanilla extract and egg, and beat until combined.
    4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and nutmeg.
    5. Combine Wet and Dry Mixtures: Stir in one-third of the dry mixture into the wet mixture on medium-low speed. Add half of the maple syrup, followed by another third of the dry mixture. Then add the remaining maple syrup, followed by the last third of the dry mixture, stirring just until combined.
    6. Add Grated Apples: Stir in the grated apples until well combined.
    7. Scoop and Bake: Use a medium cookie scoop to drop batter onto the prepared baking sheets, about 2 inches apart. Bake for 12 to 14 minutes, or until the cookies are light golden brown.
    8. Cool: Let the cookies rest on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
  2. Prepare the Maple Icing:
    1. Make the Icing: While the cookies are cooling, whisk together the powdered sugar, heavy cream, melted butter, and maple syrup in a small bowl until smooth. The icing will be thick.
    2. Pipe or Spread Icing: Transfer the icing to a resealable plastic bag and cut off a small corner to pipe it onto the cookies. Alternatively, spread it on using an offset spatula.
