Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1½ teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 cup brown sugar
- ½ cup white sugar
- ¾ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 2½ cups chopped apples, peeled and cored
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the eggs, oil, brown sugar, white sugar, and vanilla extract until smooth.
- Stir the wet ingredients into the dry ingredients until just combined. Fold in the chopped apples.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes, or until golden and set. Allow to cool before slicing.
Notes
- For extra flavor, add a handful of chopped walnuts or pecans to the batter.
- This cake can be topped with a dusting of powdered sugar or a simple glaze for added sweetness.
