Description

Ingredients

  • For the Zucchini Fries:
  • 2 zucchini, cut into sticks (½-inch wide, 4-inches long)

  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika (sweet or smoked)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 large egg, beaten
  • Cooking spray

Instructions

  1. Prepare the Ingredients: Preheat the air fryer to 400˚F. In a medium shallow bowl, combine panko breadcrumbs, Parmesan cheese, Italian seasoning, paprika, salt, and black pepper. Whisk to combine. Place the beaten egg in a separate bowl.
  2. Coat the Zucchini: Dip each zucchini stick into the beaten egg, then coat with the Parmesan breadcrumb mixture, ensuring all sides are well covered.
  3. Air Fry the Zucchini Fries: Place the coated zucchini fries in a single layer in the air fryer basket. (You may need to cook them in batches, depending on the size of your air fryer.) Spray the fries with cooking spray.
  4. Cook and Serve: Cook the zucchini fries for 9 to 10 minutes or until they are golden and crispy. Remove from the air fryer and serve immediately.
