Description

Ingredients
- For the Zucchini Fries:
- 2 zucchini, cut into sticks (½-inch wide, 4-inches long)
- ½ cup panko breadcrumbs (or use all-purpose flour, almond flour, or coconut flour)
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika (sweet or smoked)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 large egg, beaten
- Cooking spray
Instructions
- Prepare the Ingredients: Preheat the air fryer to 400˚F. In a medium shallow bowl, combine panko breadcrumbs, Parmesan cheese, Italian seasoning, paprika, salt, and black pepper. Whisk to combine. Place the beaten egg in a separate bowl.
- Coat the Zucchini: Dip each zucchini stick into the beaten egg, then coat with the Parmesan breadcrumb mixture, ensuring all sides are well covered.
- Air Fry the Zucchini Fries: Place the coated zucchini fries in a single layer in the air fryer basket. (You may need to cook them in batches, depending on the size of your air fryer.) Spray the fries with cooking spray.
- Cook and Serve: Cook the zucchini fries for 9 to 10 minutes or until they are golden and crispy. Remove from the air fryer and serve immediately.
Notes
- Serve with a side of marinara or ranch dipping sauce for extra flavor.
- If you prefer a gluten-free version, use almond flour or coconut flour instead of panko breadcrumbs.
- Feel free to add other seasonings like garlic powder or onion powder to customize the flavor.
